An unmissable gastronomic destination in Guadalajara,

This week, we visited Navaja. My friends and I were looking for a relaxed atmosphere but with an exceptional gastronomic proposal that would surprise us, and that’s exactly what we found.

Located in the Lafayette neighborhood of Guadalajara, this space offers contemporary cuisine with Mediterranean influences, standing out for its bold approach and flawless execution.

Under the direction of chef Fabián Delgado, each dish reflects impeccable execution and creativity that challenges the conventional. One of the first dishes I tried was the Crab Cake, with a perfectly crispy crust and a juicy crab filling, enhanced with ikura (fish roe) that adds a fresh, marine touch.

Another must-try is the Txipirones Taco, which surprised me with its combination of flavors and textures.

The baby squid, cooked in its ink, is served on a blue corn tortilla with black garlic mayonnaise and onion chips, achieving a balance between creamy, crunchy, and smoky.

I loved that the dishes are designed to be shared, allowing you to try different options and appreciate the diversity of flavors the chef proposes.
